This renewed interest has also crept its way onto my Pinterest page as I pin healthy options for various foods I love. Let's talk about bread. Or more specifically, toast. Love the stuff. When Andrew is at work, it is almost always my dinner, unless I branch out and make porridge or something. And yes breakfast for dinner is perfectly acceptable. I know because I asked my Facebook friends and that's some undeniably valid research right there.
So anyway, Pinterest let me to this beauty. The author claims this loaf of bread is LIFE CHANGING. How could I not give it a test run.

I almost had all the ingredients in my pantry already and what I didn't have was easily found in our grocery store all the way out here so it should be able to be found everywhere. I don't actually own a loaf tin, however and so used a round one instead. It's definitely on my list now though, as you really need the shape to make it feel like a loaf of bread as opposed to a strange savoury seed slice.
The actual making of the bread was worth it just for the pretty patterns that the oil, maple syrup and water made when they were mixed (well at least Eamon appreciated it anyway).
I think I got a little impatient and didn't cook mine long enough to get that tasty looking colour as the original above. But considering I only eat mine as toast anyway it hasn't really mattered.
Now ... the verdict. This bread is amazing, especially as toast. BUT do not expect the light fluffy bread experience that you get from a white loaf (obviously), it is clearly a very heavy dense variety that will only let you eat a small amount, as it is very filling.
I particularly recommend it with peanut butter and honey (another obsession). Mmmm.... mmm.
So that's Pinterest - 3. Bettina - 0.
Damn Pinterest. I'll get you one day.
By the way watch out for little thieves. They will enjoy this bread too and may steal it whilst you are trying to photograph it (and before you've even put anything on it!).

That bread looks awesome. I do understand the frustration of working from a recipe off the Internet though. Sometimes it works out and sometimes it doesn't!

No it's not quite a dense as muesli bars. The psyllium husk gives it the bread type texture.
